First Foods!
Hello Everyone!
It’s been four days since I’ve been “home”.
Well, I had a safe trip despite my hay fever when I departed Japan and because of the climate change (from cool in Japan to hot in the Philippines), the hay fever became a “dust/temperature” allergy as soon as I landed Manila and so migraine attacked 😭.
I’d been at home (literally) for two consecutive days trying to make my condition better.
While getting back on my healthy self, these were the foods my mom prepared since teacher Jake and I missed those a lot too!
Paella
“Paella” – a Valencian rice dish that has ancient roots but its modern form originated in the mid-19th century in the area around Albufera lagoon on thr east coast of Spain, adjacent to the city of Valencia.
This one is called a Seafood paellas made with a variety of fish and shellfish, each adding its own flavor and texture.
Kare-kare
In the yellow bowl is “kare-kare”.
Again, one of my mom’s specialties.
Kare-kare is a classic and beloved Filipino stew made of meat and vegetables in thick and creamy peanut sauce, traditionally with shrimp paste (bagoong) and rice on the side.
Filipinos often reserve this dish for big parties like town fiestas, christenings, even weddings. It’s a dish that’s both celebratory and celebrated. And because it’s our “homecoming” and my daughter’s graduation…it’s really a time for Celebration!
Fried dried fish with tsokolate (bulad nga parotpot)
We Filipinos would say that this fried dried fish is “stinky” yet “yummy”! but I bet you wouldn’t want to try it 🙄.
This is more delicious when paired with our native “tsokolate” poured in top of the hot white rice.
Pancit bihon
Famous during birthdays and other special occassions in the Philippines – Pancit bihon.
In Filipino cuisine, pancit are noodles.
Noodles were introduced into the Philippines early on by Chinese Filipino settlers in the archipelago, and over the centuries have been fully adopted into local into local cuisine, of which there are now numerous variants and types.
Pastillas
And for my dessert, all the way from my mom’s hometown – Leyte province.
Pastillas (carabao’s milk candy) is made from pure carabao’s (a type of water buffalo) milk with cornstarch for the velvetry texture.
Cravings satisfied indeed!’
Preparation for the Big Day!
At this moment I am packing up for my flight tomorrow early morning bound to the City of Gentle People – Dumaguete where my daughter’s University is located and is my and Jake’s Alma Mater too, Silliman University, to attend her Graduation Day with my son. We will be staying there in a hotel for three days.
Just like Jake, she will be graduating with “flying colors” with the degree of Bachelor of Science in Psychology and is planning to proceed to Medicine to become a doctor (hopefully, in the future). As a parent, I will just be here to guide and support her dreams.
